docs: replace placeholder personas with defined stakeholder personas in PRD
Replace the three illustrative placeholder personas (Sarah Meyer, Marcus Klein, Jing Liu) with four agreed stakeholder personas — Anna Becker (Project Manager), Dr. Jonas Weber (Researcher), Laura Hoffmann (Data Steward), and Dr. Minh Tran (Data Scientist) — using a consistent Role / Primary need / Pain point structure.
