Add new available model versions

Hello @AAlvAAro,

Thank you for providing this valuable resource. How do you plan to incorporate new model versions in the future? I briefly reviewed it and noticed that additional coding would be required for someone wanting to use Claude v2.1.

Hi @Grandvizir,

To add the new Claude 2.1 version a new payload builder for that version would be required: just like https://github.com/AAlvAAro/ruby-amazon-bedrock/blob/main/lib/bedrock_runtime/payload_builders/anthropic/claude_v2.rb. If the model version is already in place feel free to open a PR with those changes and I'll review them. Thanks!
