fix(ci): latest tag docker does not move to newest version

What happened?

When a new version of slyde is pushed, the latest tag does not move to the newest tag. The major and minor tags do move. So when you push v1.2.3 then 1, 1.2, and 1.2.3 do get created/moved, but latest does not.
