• I have a PR to update the version / release notes: Prepare for 56.1.0 release #8202
• I have a PR that tests the upgrade with DataFusion: Upgrade to arrow 56.1.0 datafusion#17275

Assuming the tests pass on the DataFusion PR I'll merge this in and proceed to making the release candidate
