Add `prek.toml` example to docs?

I noticed the docs currently only show .pre-commit-config.yaml examples for Ruff. Since the Ruff project itself now uses prek instead of pre-commit, would you be interested in adding a prek.toml example to the documentation?

If so, I’d be happy to contribute a PR for it.
