Purpose of PR

The canary release with ^12.0.0-new-beta.11 was released to the main branch unintentionally due to this incorrect step in the release job. This restores the contentful-management dependency to the stable version (^11.67.0) and removes the problematic git configuration from the release workflow to prevent this from happening again.
