This is already done in the easyblock, and needed since the "latest" symlink pointed to the full version in versions < 2024 but to a shorter version (e.g. 2024.2) in 2024 versions.

Only really matters for imkl >= 2024.0, since for earlier versions the latest symlink just points to a subdirectory with the exact same version as we use in EasyBuild.
For imkl 2024.0, mkl/latest points to 2024.0 (instead of 2024.0.0).
For imkl 2024.2.0, mkl/latestpoints to 2024.2
