Add the ability to configure themes for gaudi

As a gaudi user I would like to be able to easily reuse themes and skins for gaudi.

To achieve this on a high level:

• Extract main variables into a default theme file
• Allow themes to be defined in the config file
• Dynamically load the theme when building gaudi and fallback to the default theme
