Light mode / Full catppuccin theme

Summary

• Adds missing catppuccin colours
• Applies colours based on style guide
• Changes to meet contrast requirements (AA) in dark mode
• Adds light mode (Catppuccin Latte) based on UA

Notes

• Some non-catppuccin-standard colours have been replaced
  • cyan -> Sapphire
  • magenta -> Mauve
• There are significant contrast issues with the light mode... but this is the nature of catppuccin so there's a call to make there.

• Update demo image to match theme

Not controversial at all - AA for the demo is great.

Folk will set their terminal as high/low contrast as they like, but having a nice accessible demo is ideal.

Before I go ahead and get the vhs demo rendering in both modes - what do you think to the light mode? Should we include it as is?

Options:

1. Include as is for now, but fix later (maybe with option 3)
2. Don't include light mode but add other changes
3. Swap to a different light theme that is AA - will take some work to map it all properly. From experience at work, that's actually hard to find too.
