Internal telemetry

The detailed level RPC metrics on the internal telemetry metrics page are not available in the latest semconv version (v1.40.0) nor exported by the collector, which is misleading for the readers. Only 2 RPC metrics should be available there.

@odubajDT Hi, I’d like to work on this issue.
It seems the RPC metrics listed in the docs are not aligned with the latest semconv version.
I’ll verify and update the documentation accordingly.
