For roof surfaces with roof:shape=skillion, the direction from high to low is specified using roof:direction=*.

To measure the angle/direction from high to low, I’m currently using the MB-Ruler program.

However, it would be easier to draw a line between the highest and lowest points, snap it into place, and then read the direction/angle that way.
