`macos-26-intel`-ran tests are incredibly flakey

The runners themselves seem borked, as when I go to download the logs, GitHub yields an error page. They seem to stall for no reason, frequently during the setup of Lima.

actions/runner-images#13882 seems to be someone else reporting this, with even Python reverting use of macos-26-intel for now :/
