Add GitHub releases

The way I find out there's been a new release is from another repos' Dependabot but I still have to go here to check the release notes (thought I already opened an issue or discussion for this but I can't find it 😅)

(Not sure if it's possible to guide Dependabot to the changelog so it can show that instead of nothing as is the case right now)

Sorry for the spam, I was experimenting with migrating to Github releases for this issue and it got a bit out of hand haha
