CI builds against latest dependency versions is currently broken by ZcashFoundation/zebra#10253.

ZF has released updated versions, so we just need to update this PR and ensure that Zaino gets the same updates, otherwise utACK

Marked as draft because the current state of this PR would make Zallet unusable if merged (due to Zaino blocking startup on being fully indexed). Unless that behaviour change to the Fetch backend is reverted (which seems unlikely given zingolabs/zaino#925), this PR is now effectively blocked on #336.

This makes Zallet basically unusable on mainnet and testnet due to very
long initialization times, but is a requirement for Zallet to work at
all instead of hanging due to a Zaino bug.
