The Zowe Explorer API readme contains outdated information

Describe the bug

The modules listed in the readme do not contain all modules in the API package. There are also some issues with the Profiles API section, e.g., ZoweExplorerApi is not exported from the profiles module. Some of this info could be replaced using MainframeInteraction from lib/extend
