feat: add ssi-dim-wallet-stub for local deployment

Description

Adds ssi-dim-wallet-stub to be used instead of own mock iam:

• added ssi-dim-wallet-stub (postgres) to local/docker-compose-infrastructure.yaml
• renamed references to ssi-dim-wallet-stub to wallet
• allow to use either wallet with small manual effort

Pre-review checks

• Backend version bumped, if needed (backend/pom.xml)
• Open API specification updated, if controllers have been changed (use python script scripts/generate_openapi_yaml.py with running customer backend)
